Traditional Shetland Cookery Demonstrations
We are delighted to welcome Margaret Stuart and Wilma Couper to Flavour of Shetland this year. Margaret, together with Shetland Heritage Books, recently published a facsimile of her mother’s traditional Shetland cookery book “Cookery for Northern Wives” originally published in 1925.
As well as a display of old traditional artefacts used in cooking Margaret will discuss the traditional recipes in the book (which will be for sale) and Wilma will demonstrate how to make traditional bannocks and beremeal bannocks.
Demonstration will take place daily at 11.30am, 1.00pm, 2.30pm and 4.00pm.
Food Outlets
Carrying on that special 'flavour' of Shetland theme and satisfying the crowd's appetite, Seafood Shack, The Great Wall, The Cafe Consulate, Peerie Treats and Shetland Fudge Company will set out their stalls on the pier while Valhalla Brewery take charge of the bar. The food stalls will be serving up a range of Shetland produce cooked not only in traditional ways but with an international twist.

Seafood Shack
Supported by Shetland Aquaculture, Seafood Shetland and their members, the Seafood Shack will offer the very best of Shetland's seafood produce. Chef Glynn Wright and the team from North Atlantic Shellfish will tempt your taste buds daily. Sample seafood chowder, fish and chips, cajun salmon, paella, mixed seafood platters and fresh mussel dishes. See their full menu [pdf 144KB].
The Great Wall
As an authentic cuisine restaurant, The Great Wall combine local produce with authentic recipes to provide a different taste of food. Shetland beef, lamb, scallops and salmon are great produce to work with and use them on their restaurant menu. The Great Wall has taken part in Flavour of Shetland since it began in 2005 and continues to produce authentic cooking using Shetland produce.
The Cafe Consulate
The Cafe Consulate provides quality specialist coffees from Britain's most northerly Barista, Hilary Seatter and her mobile espresso bar. With local homebakes and a stylish Italian coffee menu they guarantee a refreshing service that will put a spring in your step! The espresso bar will comprise of three flavours of coffee freshly ground to order and exquisite but simple tea blends to suit all tastes. Hot chocolate and milkshakes offer choice for children making this a stall for all the family.
Valhalla Brewery
Taking charge of the bar this year Britain's most northerly brewery. Valhalla Brewery produce 6 fine ales: Auld Rock, White Wife, Simmer Dim, Old Scatness, Sjolmet Stout and Island Bere; ideal for real ale drinkers and enthusiasts.
Peerie Treats
Peerie Treats is a small family business which produces high quality hand-made fudge, toffee, macaroon bars, coconut ice and their unique scallywags.
