Flavour of Shetland is delighted to welcome back one of the finest of Britain’s Master Chefs, George McIvor, to this year’s event. He will be accompanied by Master Chef Colin Bussey and both promise to cook up a storm over the four days (from 21 to 24 June) using the abundance of high quality Shetland produce hand picked for the occasion.
Chairman of the Master Chefs of Great Britain, George McIvor, also runs his own culinary consultancy business, ‘The Full Range’, while Colin Bussey is executive chef at Scotland’s luxury Gleneagles Hotel. The unique combination of skills, personalities and ingredients will be a real treat for locals and visitors who come to see the demonstrations.
Carrying on that special ‘flavour’ of Shetland theme and satisfying the crowd’s appetite, The Olive Tree, The Café Consulate, Bestafoys Catering from Herrislea House Hotel, The Great Wall and Skipidock Inn, Relish, Unstoyst, Merrie Dancers, Peerie Treats, Blue Coo Ice-Cream and The Shetland Fudge Company will set out their stalls on the pier while Valhalla Brewery will take charge of the bar serving up thirst quenching pints of ale.
The very best produce will form a delicious menu that organiser Nicola Halcrow is confident will satisfy and cater for every taste and palate. “Once again, Shetland’s finest food and drink producers have really shone. We are delighted with the high quality menu that has been compiled to take best advantage of the wealth of superb local ingredients available.
“The Olive Tree will serve fish soup with freshly baked rolls, fish plates piled high with seafood including organic poached salmon, smoked and hot smoked salmon, gravlax, prawns, smoked mussels, crab, lobster and oysters. For dessert, enjoy homemade pastries, scones and biscuits served with freshly made Italian style coffees from The Café Consulate.
“The Café Consulate will also be serving a range of coffee milk shakes and strawberry, chocolate, banana and vanilla milk shakes.
“Bestafoys Catering from Herrislea House Hotel will cook up a variety of lamb products including burgers, lamb steak salad rolls, soup, curries, and mint and lime glazed lamb shanks, showing the versatility of Shetland lamb in preparing modern, tasty finger food.
“The Great Wall and Skipidock Inn will make excellent use of local produce as they prepare grilled scallops with garlic and ginger, Chinese curry lamb, grilled salmon with soya sauce and sliced minute lamb burgers.
“New this year to Flavour of Shetland is Relish bringing a range of local burgers and minute steaks to the table, while Unstoyst joins us again to give festival goers the opportunity to try their plump and succulent oysters.
“Bringing these outlets all together in one place will create a real local food market on Victoria Pier. It is at times like these that we fully appreciate the superior selection of food and drink available in Shetland. Flavour of Shetland will once again help raise the profile of both Shetland’s high quality produce and culinary skills and we want to make Shetlanders aware and proud of what the islands currently produce and be inspired to develop their own initiatives.”
